Gibbsville Ages Special Reserve Cheddar to Sharp Perfection

Gibbsville Cheese is introducing Special Reserve Cheddar, a super sharp, extra aged version of its trademark Cheddar. The cheese is naturally rindless and available in yellow or white Cheddar. Owner and cheesemaker Phil Van Tatenhove tests and selects just the right 40-pound blocks to be aged for 4 to 5 years and receive the Special Reserve distinction.

Located near Sheboygan Falls in east central Wisconsin, Gibbsville Cheese has been making Cheddar, Colby and Monterey Jack for more than 65 years.
